Servings4
8 ounces cream cheese
1 cup sugar
3 eggs
2 cups milk
1 teaspoon vanilla extract
1 cup white sugar (for caramel)
1

Mix together 8 ounces of cream cheese and 1 cup of sugar in a bowl.

2

Add 3 eggs to the mixture and mix until well incorporated.

3

Slowly add 2 cups of milk and 1 teaspoon of vanilla extract to the mixture and mix until smooth.

4

In a heavy skillet, add 1 cup of white sugar to caramelize it.

5

Stir the sugar continuously over medium heat until it starts to melt, about 2-3 minutes.

6

Once the sugar starts to clump, reduce the heat to medium-low or low and continue stirring for about 8 minutes until fully melted and caramelized.

7

Carefully pour the melted caramel into individual dishes while swirling to coat the bottom.

8

Prepare a baking pan with about an inch of water for a water bath.

9

Pour the custard mixture into the caramel-coated dishes and place them in the water bath.

10

Bake in the oven for 35 minutes to 1 hour until set, checking that the center is slightly jiggly.

11

Run a knife around the edges of the flan and invert onto a plate while still warm.
