The vibrant mix of vegetables and herbs, along with the tangy sumac dressing, makes it a refreshing dish enjoyed during warm months. Today, Fattoush is celebrated worldwide, often featured in Middle Eastern restaurants and gatherings.

Whole wheat pita bread 2
Olive oil 2-3 tbs
Lehsan (Garlic) finely chopped 1 tbs
Sumac powder ¼ tsp
Himalayan pink salt ¼ tsp or to taste
Iceberg 5-6 leaves
Ice chilled water as required
Podina (Mint leaves) handful
Hara dhania (Fresh coriander) handful
Mooli (Pink radish) 3-4
Hara pyaz (Spring onion) leaves 1 stalk
Cherry tomatoes 3-4
Salad patta (Lettuce leaves) 1 bunch or as required
Kheera (Cucumber) 1 medium
Black olives 5-6
Extra virgin olive oil 4 tbs
Sirka (Vinegar) 1 tbs
Lemon juice 1 tbs
Honey 1 tbs
Darchini powder (Cinnamon powder) ¼ tsp
Sumac powder ¼ tsp
Zeera (Cumin seeds) roasted & crushed ¼ tsp
Kali mirch powder (Black pepper powder) ¼ tsp or to taste
Himalayan pink salt ½ tsp or to taste

Cut whole wheat pita bread in square cubes.

In a frying pan, add whole wheat pita bread, olive oil, garlic, sumac powder, pink salt, mix well & sauté on medium flame until golden & crispy (4-5 minutes).

You can also fry it until crispy (6-8 minutes).

Take out Iceberg leaves & tear with hands, soak them in iced chilled water for 10-15 minutes.

Chop mint leaves, fresh coriander & set aside.

Slice pink radish, chop spring onion, cut cherry tomatoes in 4 pieces, roughly chop lettuce leaves & set aside.

Cut cucumber & black olives in slices & set aside.

In a bowl, add whole wheat pita bread & all vegetables.

In a small bottle, add olive oil, vinegar, lemon juice, honey, cinnamon powder, sumac powder, cumin seeds, black pepper powder, pink salt, close the lid & shake well.

Pour prepared dressing over the salad, toss well & serve!
