Fattoush Salad

Cultural Context

Fattoush salad hails from Lebanon and is a staple of Levantine cuisine. Traditionally made with leftover bread, it reflects the resourcefulness of home cooks. The vibrant mix of vegetables and herbs, along with the tangy sumac dressing, makes it a refreshing dish enjoyed during warm months. Today, Fattoush is celebrated worldwide, often featured in Middle Eastern restaurants and gatherings.

3-4 tbsp lemon juice
2 garlic cloves
¼ teaspoon salt
500 g minced meat
2-3 onions, chopped
1 tsp 7 spice
1/2 tsp black pepper
1 tbsp salt
1/2 cup pine nuts
fine bulgur wheat ½ kg
mince meat ½ kg
cornflour 2 tbsp
oregano powder
1 tbsp black peppercorns
2 tsp dried marjoram
2 tsp dried basil
1 tsp dried mint

6 pcs frozen puff pastry
1 lt milk
1 cup condensed milk
1 cup white sugar
½ tsp saffron
¼ cup raisins
¼ cup almond flakes
¼ cup almond slivered
¼ cup pine nuts
¼ cup chopped pistachio
¼ cup flaked coconut
500g sugar
300 ml water
1 tsp lemon juice
1 tbsp rose water
600 grams mozzarella cheese
500g kunafa pastry, fresh or frozen

Prepare the Fattoush Salad by combining chopped romaine lettuce, cucumbers, tomatoes, green onions, and pomegranate seeds. Tear pita bread into pieces and add to the salad. Drizzle with olive oil, sumac, salt, and pepper. Add pomegranate molasses and lemon juice just before serving.

For the Tabbouleh Salad, soak bulgur in water until tender. Mix with diced cucumber, diced tomato, parsley, mint powder, green onions, olive oil, lemon juice, fine sea salt, and black pepper to taste.

To make Hummus, blend tahini, water, olive oil, salt, garlic, lemon juice, and chickpeas until smooth. Garnish with olive oil, chopped parsley, and a sprinkle of sumac.

For Baba Ganoush, roast the eggplant until soft. Scoop out the flesh and blend with tahini, lemon juice, garlic, and salt. Drizzle with olive oil before serving.

Prepare the Kibbeh filling by mixing minced meat, chopped onions, 7 spice, black pepper, salt, and pine nuts. For the casing, combine fine bulgur, minced meat, onions, cornflour, 7 spice, black pepper, oregano, salt, and spices. Shape the casing around the filling and fry until golden brown.

For Umm Ali, layer puff pastry in a baking dish, pour over a mixture of milk, condensed milk, sugar, saffron, raisins, almond flakes, slivered almonds, pine nuts, pistachios, and coconut. Bake until golden and bubbly.

For Kanafah, prepare sugar syrup by boiling sugar, water, lemon juice, and rose water. Layer kunafa pastry with melted butter and mozzarella cheese, bake until golden, then drizzle with sugar syrup and garnish with pistachios.
