This creamy dip is not only a staple in Lebanon but has also found its way into Mediterranean and Middle Eastern cuisines worldwide, often enjoyed for its nutty taste and smooth texture.

Sunflower seed butter is lower in calories and nut-free.
olive oil

Canola oil is more affordable and has a neutral flavor.
Smash garlic in a mortar and pestle or with a knife on a cutting board using the flat part of the blade.
Combine smashed garlic with salt in the mortar to create a paste.
Add a little bit of lemon juice to the mortar and stir to mix with the garlic and salt.
Transfer the garlic mixture to a food processor.
Add tahini to the food processor.
Pour the remaining lemon juice into the food processor.
Blend the mixture in the food processor until combined; it will be thick at first.
Add water in a couple of tablespoons to thin the sauce out, adjusting to desired consistency.
Total amount of water added is 59 ml or about 1/4 cup; blend again until creamy.
