2-3 cucumbers
2 tomatoes
1 capsicum
1/2 iceberg lettuce
1/2 cup parsley
3-4 tbsp mint
1/2 radish
1-2 whole wheat pita bread
1 tsp olive oil
1-2 pinch salt
1/2 cup olive oil (for dressing)
1/3 cup lemon juice
1/2 tsp salt (for dressing)
1 chopped garlic
1 tbsp sumac or lemon zest

Peel cucumber and cut into cubes.

Deseed tomatoes and cut into cubes.

Deseed capsicum and cut into cubes.

Cut iceberg lettuce, parsley, mint leaves, radish, and whole wheat pita bread.

Heat griddle, add whole wheat pita bread cubes, olive oil, and a pinch of salt, toast until brown on low flame or bake at 180 C for 10 minutes.

For salad dressing, in a jug, add olive oil, lemon juice, salt, garlic, and lemon zest, whisk well and pour into a squeeze bottle.

In a bowl, add all vegetables, bran pita bread, and salad dressing, mix well and serve.
