1 small pita bread
3 cups Romaine lettuce, chopped
1 big cucumber (150g), chopped
1 big tomato (200g), chopped
1/2 cup green onions (both white and green parts), chopped
5 radishes (50-60g), stems removed, thinly sliced
1/2 cup chopped fresh mint leaves (optional)
1/2 cup parsley (optional)
1/2 teaspoon salt
1 teaspoon sumac
1/2 teaspoon dry mint
juice of 1 lemon (50-60 ml)
3 tbsp. extra virgin olive oil
black pepper (optional)

Cut pita bread and toast it in the oven or fry with oil, set aside. You can add seasoning to your pita such as salt and pepper, sumac or zaatar.

In a large mixing bowl, combine the chopped lettuce, cucumber, tomatoes, green onions, sliced radish, and mint.

For the dressing, combine lemon juice, olive oil, salt, sumac, and dry mint, and mix well.

Dress the salad with the vinaigrette and toss lightly.

Finally, add the pita chips on top and toss one more time. Serve immediately.
