Wash goat meat with lemon and vinegar.

Add pimento seed (allspice), onion and herb mix, adobo complete seasoning, jamaican curry powder, black pepper, 2 teaspoons salt, fresh thyme, maggie complete seasoning (optional), garlic, onions, green onions, and chopped carrot to the goat meat.

Mix all the seasonings with the goat meat thoroughly and let it marinate for a few hours or overnight.

Heat a couple tablespoons of oil in a pot until hot.

Add curry powder to the hot oil and let it burn for a few minutes to infuse the flavor into the oil.

Add the marinated goat meat to the pot and cover it, allowing it to spring its own water for about 10 minutes.

After 10 minutes, stir the meat to check the color and ensure it is well coated with curry.

Add 2 cups of water to the pot and let it cook for about 30 minutes.

After 30-35 minutes, check the meat and add another 2 cups of water if necessary, then cover and cook for an additional 45 minutes.

After about an hour, add any remaining seasonings and stir them in.

Cover the pot and let it cook for another 20 minutes to allow the carrots and other vegetables to soften.
