Take surmai fish and squeeze juice of half a lemon over it.

Add 1 tablespoon of whole coriander seeds, 1 tablespoon of cumin seeds, a little dried fenugreek leaves, turmeric, 2 Kashmiri red chilies, 8-10 black peppercorns, and 5 cloves into a frying pan.

Dry roast the spices in the frying pan.

Grind the roasted spices into a powder.

In a mixing bowl, add 4 tablespoons of yogurt according to the amount of fish you have.

Add the ground spice mixture to the yogurt.

Add 1.5 tablespoons of besan, 1 tablespoon of rice flour, turmeric, ginger garlic paste, and juice of half a lemon to the yogurt mixture.

Add crushed dried fenugreek leaves and salt to taste, mixing everything well.

If the mixture is too dry, add a little water; if the yogurt is too sour, skip adding lemon juice.

Coat the fish pieces thoroughly with the marinade and let it marinate for 2 hours.

After 2 hours, heat oil in a frying pan for shallow frying.

Slowly add each piece of fish into the oil, cooking on low to medium flame.

Cook each side for 2-3 minutes until golden brown, turning them carefully.

Once both sides are golden brown, remove the fish from the oil and turn off the gas.
