130g-150g olive oil
150g chickpea (soaked overnight)
4 carrots
4 onions
1 tbsp ground cumin
1 tbsp golden raisin
1 garlic

Cut meat into small pieces

Peel and cut onions and thinly slicing crosswise

Peel and cut carrots into juliennes (long thin strips)

Put olive oil into a pan

Add meat and fry until it turns golden brown, then do the same for the onions

Add half of the carrots and simmer (do not cover the lid)

Add the chickpea, cumin and pinch of salt

Add hot water so the meat and carrots are submerged

Put the whole garlic, cover and simmer for 35-40 mins on medium heat

Carefully remove the garlic, so it doesn't get mashed

Add the remaining carrots, a bit of cumin and pinch of salt

Rinse rice and add it to the pan, smoothing it over the meat

Add the golden raisin and carefully pour hot water so the rice is submerged

Cook until rice is tender and liquid has been absorbed

Put the garlic in the middle of the pan and press into the rice

To steam, make holes in the rice using a wooden stick or a spoon

Cover and leave it for 25-30 minutes in a low heat.
