Traditionally enjoyed at breakfast with coffee or as a sandwich, these slightly sweet rolls embody the Filipino spirit of hospitality. Coconut oil offers a tropical flavor and is dairy-free.
Combine warm water and sugar in a bowl; sprinkle yeast on top and let sit until frothy, about 5-10 minutes.
In a large mixing bowl, mix flour and salt together.
Add the yeast mixture, milk, melted butter, and eggs to the flour; mix until a dough forms.
Knead the dough on a floured surface until smooth and elastic, about 8-10 minutes.
Place the dough in a greased bowl; cover with a cloth and let rise until doubled in size, about 1-2 hours.
Punch down the dough and divide it into small portions; shape each into a ball.
Roll each ball in breadcrumbs and place on a baking sheet lined with parchment paper.
Cover and let rise again until puffy, about 30-45 minutes.
Preheat the oven to 375°F (190°C).
Bake the rolls until golden brown, about 15-20 minutes.
Remove from the oven and let cool slightly before serving.
