If you can find slightly fine bread crumbs, skip grinding. If not, grind until slightly fine and set aside.
Slightly whisk eggs until mixed but no bubbles. Cover and set aside.
In a bowl, combine All-Purpose flour, Bread flour, ube powder, milk powder, sugar, and yeast, then mix in salt. Make a well and add beaten eggs. Gradually add warm water until a ball forms.
Add room temperature butter and knead until smooth and elastic, about 8-15 minutes. Form into a ball and grease the bowl and dough with vegetable oil. Cover and let rest for 1 hour.
Preheat oven to 350°F (175°C). Punch down the dough and divide into equal parts. Shape each piece into a ball, seal edges, and coat with butter and bread crumbs.
Place on a tray lined with wax or parchment paper, cover, and let rest for 15 minutes. Bake for 20-25 minutes until golden brown.
