Switch on the gas and add little oil.

Add 2 bay leaves, cloves, black peppercorns, garlic cloves, sliced ginger, spring onions, and roughly sliced carrot. Stir and sauté for at least two minutes.

Add chicken bones and a little salt, sauté for a few minutes.

Add water and close with a lid, cook for at least 30 minutes.

Remove the lid and strain the stock into a bowl.

Switch on the gas again and add sesame oil.

Once the oil is hot, add sliced red chili and chicken juliennes, sauté until the chicken turns white.

Add diced carrot and green beans, sauté for a few minutes.

Add sliced baby corn and mushrooms, sauté until mushrooms start to change color.

Add the strained stock and bok choy, let it cook for a few minutes until boiling.

Add seasoning: Madras curry powder, soy sauce, and a few drops of vinegar.

Add 1 tbsp of slurry to the soup and mix well, check the consistency, and add more slurry if needed.

Serve the soup.
