Take out the bones from the smoked mackerel fish and wash it thoroughly.

Break the washed smoked mackerel into small pieces.

Heat some oil in a pot.

In a bowl, add 1 tablespoon of cornstarch, 1/2 tablespoon of fish sauce, 1 tablespoon of light soy sauce, 1 tablespoon of dark soy sauce, 1 tablespoon of oyster sauce, 2-3 pinches of Maggi sauce, 1/2 teaspoon of sugar, 1 cup of clean water, and 1/4 teaspoon of salt, garlic and ginger paste. Mix well and set aside.

Add the smoked mackerel fish to the heated oil and fry or saute for about 5 minutes on high heat without adding any seasoning or salt.

After frying the fish, take it out from the pan and set it aside.

In the same pan, add chopped onions and 1/2 tablespoon of ginger paste. Fry for about 1 minute.

Add chopped green, red, and yellow bell peppers to the pan and saute for about 2 minutes.

Add the fried smoked mackerel back to the pan and pour in the prepared sauce. Stir well and leave on fire for about 1 minute.

If the sauce thickens too much, add a little bit of water and stir.

Garnish with chopped green spring onions off the fire and mix well.
