Guava Jelly

Cultural Context

Guava jelly has its roots in tropical regions, particularly in India, where guavas are abundant. Traditionally, it has been made during the fruit's peak season and served as a sweet spread or condiment. This jelly not only preserves the fruit's flavor but also evokes memories of family gatherings and homemade treats. Today, guava jelly is enjoyed in various forms across the globe, often used in desserts or as a topping for breads and pastries.

1

Select green limes with smooth skin and thin rind.

2

Slice the limes and squeeze out all the juice.

3

Cut off the ends of the limes and place the rinds in a glass or white enamel bowl.

4

Soak the lime rinds in water and salt for 24 hours, changing the water every four hours.

5

After 24 hours, rinse the rinds in plain water to wash away the salt content.

6

Grind the lime rinds using an electric grinder or blender until it reaches a pulp consistency.

7

Combine equal parts of lime rind pulp and sugar in a pot. For example, use 1 cup of rind and 3/4 cup of sugar for a less sweet preserve.

8

Cook the mixture over low heat, stirring until the sugar dissolves and the mixture thickens.
