Guava Jelly

Cultural Context

Guava jelly has its roots in tropical regions, particularly in India, where guavas are abundant. Traditionally, it has been made during the fruit's peak season and served as a sweet spread or condiment. This jelly not only preserves the fruit's flavor but also evokes memories of family gatherings and homemade treats. Today, guava jelly is enjoyed in various forms across the globe, often used in desserts or as a topping for breads and pastries.

1

Wash the guavas and cut off the head and tail.

2

Dice the guavas as small as possible and place them in a large pot.

3

Add 10 cups of water to the pot, ensuring it's just above the guavas.

4

Boil the guavas for about 30 minutes until soft.

5

After 20 minutes, check the guavas for softness and continue boiling for another 10 minutes if needed.

6

Pour the guavas and water through a colander to strain out the solids.

7

Press the mixture through a strainer to extract as much juice as possible, discarding the solids.

8

Measure the guava juice; you should have about 4 cups.

9

Transfer the juice to a clean pot and add the juice of one orange and 3/4 cup of brown sugar.

10

Cook the mixture on the stove for about an hour, stirring occasionally, until it thickens.

11

Skim off any dross that forms on the surface while cooking.

12

After about 1 hour and 10 minutes, test the consistency by placing a spoonful on a cold plate and checking if it feels thick.

13

Once thickened, turn off the heat and let it cool slightly before pouring into jars.

14

Pour the guava jelly into a jar, filling it as much as possible.
