Bring 2 L of 3% milk to a rolling boil in a non-stick pan, stirring at intervals to prevent sticking.

Once boiling, add lemon juice in drops at intervals, spreading it across the milk.

Continue boiling until the milk reduces and forms a grainy texture, ensuring excess moisture evaporates.

Add 1 cup of sugar to the mixture and stir until dissolved, then add an additional half cup of sugar for a chewier texture.

Mix in 1 heaped tablespoon of ghee and continue cooking on high flame until the mixture thickens and turns a mild caramel color.

Transfer the thickened mixture into a lined tin (with butter paper or greased with ghee) and press it evenly into the tin.

Dab a little ghee on top of the mixture, cover with another sheet of butter paper, and wrap in a kitchen towel for insulation.

Let it set in a warm place for about 5 to 6 hours, or up to 12 hours if desired.

After setting, gently remove from the tin and cut into medium-sized pieces.
