This creamy rice pudding is a beloved dessert that showcases the simplicity and richness of Turkish flavors. Today, it is enjoyed in homes and restaurants alike, with variations that include different nuts and spices, making it a versatile treat for any gathering.

Combine rice and water in a saucepan, bring to a boil, then simmer until tender, about 15-20 minutes.
In a separate pot, heat milk over medium heat until steaming, stirring occasionally.
Mix cornstarch with a little cold milk until smooth, then add to the heated milk.
Add sugar and vanilla to the milk mixture, stirring constantly until thickened, about 5-7 minutes.
Incorporate the cooked rice into the milk mixture, stirring well to combine.
Remove from heat and let cool slightly before adding egg yolks, mixing thoroughly.
Pour the mixture into a greased baking dish and smooth the top.
Bake in a preheated oven at 180°C (350°F) for 30-35 minutes until the top is golden.
Remove from the oven and let cool to room temperature.
Sprinkle cinnamon and chopped nuts on top before serving.
Chill in the refrigerator for at least 2 hours before slicing and serving.
