Separate eggs, beat egg yolks with 3/4 cup sugar until pale and fluffy, add vanilla and milk, mix, then sift in the dry ingredients and mix, leaving aside.

In a separate bowl, beat egg whites, slowly adding remaining 1/4 cup sugar, until stiff peaks form, then fold into the batter until combined, being careful not to over mix.

Pour the batter into a lined baking tray and bake in a preheated oven at 350°F (177°C) for 25-30 minutes or until a toothpick comes out clean.

Let the cake cool, then make the milk mixture by combining all the milk mixture ingredients in a saucepan and cook until just warm.

Remove the baking paper, flip the cake over back into the same baking tray, poke holes in the cake, and pour all the warm milk mixture over it, covering to let the cake soak up the milk for a few hours or overnight.

Top with whipped cream and add the caramel layer, then cut into slices and serve.
