Prepare a square steel container (Tiffin box) by greasing it with oil or ghee and lining it with butter paper for easy removal.

Place the container over a blanket to help with heat retention for better color.

Transfer some milk to a different vessel if making a larger quantity to reduce it faster.

Continue to stir and reduce the milk until it is reduced by half, achieving a thick consistency.

Mix 2 teaspoons of water with the citric acid, then add it in batches to curdle the milk, stirring continuously.

Add sugar in batches, starting with 2-3 tablespoons, mixing well before adding more to avoid excess water release.

After adding sugar, cook for another 3-4 minutes until the mixture changes color and thickens.

Add ghee in batches, mixing well after each addition.

Add cardamom powder (optional) and mix until the khoya reaches a grainy consistency.

Turn off the flame and transfer the hot mixture into the prepared steel container, covering it with a lid.

Wrap the container in a blanket and let it sit for 6-7 hours or overnight to set.

After setting, remove the container and run a knife around the edges before inverting it onto a plate.

Cut into small bars and optionally garnish with pistachios or nuts.
