Gradually add the cooled coconut milk mixture to the eggs, whisking constantly to prevent curdling.
In another bowl, combine flour, baking powder, baking soda, salt, nutmeg, and cinnamon.
Gradually add the dry ingredients to the wet mixture, stirring until just combined.
Fold in grated coconut gently until evenly distributed.
Pour the batter into a greased baking dish.
Bake in a preheated oven at 350°F (175°C) for 25-30 minutes until golden and a toothpick comes out clean.
Let the cake cool in the pan for 10 minutes before transferring to a wire rack.
Dust with powdered sugar before serving.
