Add water to the mixture to achieve the desired consistency.
If using shrimp, add it to the filling; otherwise, skip this step for a vegetarian option.
Prepare the spring roll wrappers on a clean surface.
Place a portion of the filling onto a wrapper and roll it tightly, sealing the edges with a bit of water.
Heat oil in a pan for frying, ensuring it's hot enough before adding the egg rolls.
Fry the egg rolls in the hot oil until golden brown, turning occasionally for even cooking.
Remove the fried egg rolls and drain on paper towels before serving.
