Blanch 9 oz of bean sprouts in boiling water for about 2 minutes.

Transfer the bean sprouts to an ice bath to stop cooking, then drain.

Squeeze the bean sprouts between hands to remove excess water, then chop into smaller pieces.

Squeeze the juice out of 4 oz of cabbage kimchi and chop into smaller pieces.

Squeeze excess moisture out of extra firm tofu using cheesecloth or an almond milk filter bag until it crumbles.

Chop 1/2 cup of Chinese chives and set aside.

Chop garlic and ginger in a chopper blender.

Chop 1/2 yellow onion in the blender and add to a bowl.

Add chopped cooked bean sprouts, 4 oz ground pork, chopped kimchi, and 2 oz ground beef to the bowl.

Add crumbled tofu and chopped green onions to the bowl.

Season with 1.5 tsp sesame oil, sea salt, and mix well.

Season again with soy sauce, more sesame oil, and salt and pepper to taste.

Cook chopchan noodles according to package directions (6 to 8 minutes) and season with soy sauce and sesame oil.

Cut the noodles using scissors or a knife and add to the filling mixture.

For deep-frying, heat oil to 340ยฐF (170ยฐC) and deep fry until golden brown.

For pan-frying, heat a couple tablespoons of oil on medium heat, pan fry until golden brown, then add 1 tablespoon of water and cover for about 1 minute to steam.

Freeze dumplings on a tray for a couple hours before transferring to a plastic bag to prevent sticking.
