Nigerian Lamb Suya
Cultural Context
Originating from the northern regions of Nigeria, Suya is a popular street food that showcases the country's rich culinary heritage. Traditionally made with skewered and grilled meat, it's often enjoyed at social gatherings and celebrations, where the spicy, smoky flavors bring people together. Today, Suya has gained popularity beyond Nigeria, with variations found in other West African countries and even in urban areas around the world, where it continues to be a beloved dish.

Chicken is leaner and more affordable than lamb.
ground peanuts

vegetable oil

cayenne pepper

Smoked paprika adds flavor without the heat of cayenne.
Cut the lamb into thin strips to allow easy penetration and faster cooking.
Rinse the lamb a couple of times and pat dry.
Marinate the lamb with cayenne pepper, paprika, onion powder, and a generous amount of suya spice.
Add vegetable oil to the marinade and rub it into the meat.
Let the marinated lamb sit for at least 1 hour (or 2 hours for better flavor).
Soak the skewers to prevent burning in the oven.
Skewer the lamb pieces in a folded fashion.
Prepare a deep oven dish to capture any oil or residue from the meat.
Spray the dish with cooking spray to prevent the meat from drying out.
Preheat the oven to 400°F.
Place the skewers in the oven for the first 15 minutes.
Remove the skewers and marinate the meat again with suya spice and oil.
Return the skewers to the oven for another 15 minutes.
Sprinkle additional suya spice on the meat for a final finish.
