Dutch Beef Croquette

Originating in the Netherlands, Dutch Beef Croquettes are a beloved snack often served in bars and at parties. Traditionally made with leftover beef, they embody the Dutch knack for transforming simple ingredients into comforting bites. Today, they are enjoyed not only in the Netherlands but also in various forms across the globe, often accompanied by mustard for dipping.

Flaxseed meal is a great egg substitute for binding.
Heat a deep skillet and add 2 teaspoons of vegetable oil.
Add 1 cup of chopped red onion and sauté until translucent.
Add 1 bay leaf and 4 cloves, continue sautéing.
Add 1/2 cup of finely chopped tomato and sauté until soft.
Add 1 teaspoon of finely chopped ginger, 4 cloves of garlic, and 1 finely chopped green chili; sauté until combined.
Add 500 g of lean ground beef and 50 g of chorizo, breaking down the meat with a wooden spoon.
Season with salt, 1/2 teaspoon of pepper, 1/2 teaspoon of Dijon mustard, and 1/2 teaspoon of cumin powder; sauté until cooked.
Add 3 tablespoons of vinegar and 1 1/2 teaspoons of sugar, mix and cook until done.
Remove the bay leaf and separate the beef from the juices using a slotted spoon, preserving the juices.
Blend the beef and chorizo mixture to a smooth paste in a food chopper.
In the same skillet with preserved juices, add 1/3 cup of all-purpose flour and cook to make a roux.
Gradually add 1 1/2 cups of water to create a thick sauce.
Mix in the blended beef and chorizo, cooking until it leaves the sides of the pan.
Add 2 tablespoons of finely chopped cilantro and mix well.
Transfer the mixture to a bowl, cover with plastic wrap, and refrigerate for 1 hour.
Make an egg wash with 1 egg and 1 tablespoon of water, whisk together.
Scoop the mixture using an ice cream scoop, roll into cylindrical shapes, and dust with flour.
Dip in the egg wash and roll in breadcrumbs to coat.
Heat oil in a skillet and check temperature with breadcrumbs.
Fry the croquettes until golden brown, flipping occasionally.
Drain excess oil on a paper towel-lined plate.
