1 1/2 teaspoons sugar
1/3 cup all-purpose flour
1 1/2 cups water
2 tablespoons finely chopped cilantro
1 egg
1 tablespoon water

Heat a deep skillet and add 2 teaspoons of vegetable oil.

Add 500 g of lean ground beef and 50 g of chorizo, breaking down the meat with a wooden spoon.

Season with salt, 1/2 teaspoon of pepper, 1/2 teaspoon of Dijon mustard, and 1/2 teaspoon of cumin powder; sauté until cooked.

Add 3 tablespoons of vinegar and 1 1/2 teaspoons of sugar, mix and cook until done.

Remove the bay leaf and separate the beef from the juices using a slotted spoon, preserving the juices.

Blend the beef and chorizo mixture to a smooth paste in a food chopper.

In the same skillet with preserved juices, add 1/3 cup of all-purpose flour and cook to make a roux.

Gradually add 1 1/2 cups of water to create a thick sauce.

Mix in the blended beef and chorizo, cooking until it leaves the sides of the pan.

Add 2 tablespoons of finely chopped cilantro and mix well.

Transfer the mixture to a bowl, cover with plastic wrap, and refrigerate for 1 hour.
