1

Wash and clean the goat meat.

2

Season the goat meat with complete seasoning, chopped tomatoes, scallion, pimento peppers, celery, onion, garlic, green seasoning, black pepper, and salt. Mix well and allow to marinate for a couple of hours or overnight.

3

Set the Instant Pot to sauté mode and heat avocado oil.

4

Add fenugreek seeds and cumin seeds, toasting until they turn darker brown.

5

Add sliced onions, pimento, curry leaves, and hot peppers; sauté until light brown.

6

Stir in curry powder, amchar masala, and cumin, mixing until it feels grainy and toasting for about 1 minute.

7

Add water to help cook the curry until it turns into a thick paste and the oils start separating.

8

Add the seasoned goat meat to the curry mixture, coating it well.

9

Allow the goat to cook down until the natural juices dry up.

10

Add enough water to cover the meat (about 2 cups).

11

Switch off sauté mode, cover the Instant Pot, and set to pressure cook for 15 minutes (or 20-25 minutes for softer meat).

12

Release the steam after cooking, check the consistency, and if too runny, switch back to sauté mode to thicken the sauce.

13

Serve with red beans or pink beans.
