This dish showcases the use of local spices and ingredients, reflecting the region's vibrant culinary heritage. Traditionally, it is served with rice or roti, making it a staple in many households. Today, variations exist across the Caribbean, with each culture adding its twist, making it a versatile favorite.

Add 1 pot spoon of vegetable oil to a large cast iron pot over medium heat.
Add curry leaves and fry them.
Add 1/2 teaspoon of fenugreek seeds and fry until golden brown, avoiding a dark brown or red color to prevent bitterness.
Add 1 big sliced onion and fry for about 1 minute.
Add chopped pimento and garlic, stirring for another minute or two.
Cut pumpkin into slices of the same thickness for even cooking.
Add pumpkin to the pot and lower the heat between low to medium, adjusting based on pot thickness.
Stir well to mix and incorporate all the seasonings onto the pumpkin.
Add 1/4 teaspoon of salt and stir well, turning the pot to prevent sticking or burning.
Cover the pot to let the pumpkin steam in its own juices without adding water.
Cook for about 1 hour and 15 minutes until most of the water has dried up, adjusting heat to a bare minimum.
Cook uncovered until the pumpkin almost starts to stick, checking that it does not fall off quickly when lifted with a spoon.
If the pumpkin is not sweet enough, add a little sugar to enhance sweetness.
