Soak 1/4 cup rice for 1 hour after washing it thoroughly.

Mash the soaked rice to break the grains, which helps in cooking and gives a creamy texture.

Remove the extra water from the mashed rice.

Use good quality rice, avoiding broken rice.

Add 1 kg of pre-boiled milk to a pot.

Open the cardamom pods and add them to the milk.

Add the mashed rice to the boiling milk.

Stir the mixture to prevent the rice from sticking to the bottom of the pot.

Keep the heat medium until the milk starts boiling, then reduce the heat.

Cover the pot and stir occasionally until the rice is well cooked and the mixture thickens, which takes about 20-25 minutes.

Do not add sugar until the mixture thickens to avoid sticking.

After 20-25 minutes, check the consistency; it should be thick before adding sugar.

Add 1/2 cup sugar to the thickened mixture and adjust according to taste.

Increase the heat slightly to melt the sugar, which may temporarily thin the kheer.

Stir continuously for 7-8 minutes until it thickens again after adding sugar.

Add dry fruits like raisins, almonds, pistachios, or coconut as per preference.

Add 6-7 drops of vanilla essence for flavor and turn off the heat immediately after adding it.

Let the kheer cool down before serving.
