Trini Curried Goat is a beloved dish in Trinidad and Tobago, often served during festive occasions and family gatherings. The dish showcases the island's rich culinary heritage, blending Indian and Caribbean flavors through the use of spices and fresh ingredients. Traditionally, it is enjoyed with rice or roti, making it a staple at celebrations and communal meals. Its popularity has led to variations across the Caribbean, with each region adding its unique twist to the recipe.

Wash 5 lbs of goat meat.
Season goat meat with salt, JK seasoning, and all-purpose seasoning.
Add Jamaican better pack curry powder and Chief goat curry powder to the meat.
In a blender, combine garlic, onion, and pimenta peppers to make green seasoning.
Mix all seasonings into the goat meat, ensuring each piece is well coated.
Cover and let the meat marinate for at least 1 hour or cook immediately.
In a Dutch pot, add cooking oil, curry powder, chopped garlic, and onions.
Toast the curry powder with garlic and onions until fragrant.
Add the seasoned goat meat to the pot and mix well.
Cover and cook on medium to low heat for about 10-15 minutes to let the meat render its juices.
After 10-15 minutes, add hot water to the pot and mix.
Cover and cook on low heat for 45 minutes to an hour until the meat is tender.
After 1 hour, add potatoes, fresh thyme, whole scotch bonnet pepper, pimenta peppers, and coconut milk.
Optionally add Maggi seasoning for extra flavor.
Cover and cook for another 8-10 minutes until done.
