240 g tapioca flour
½ teaspoon baking powder
120 grams grated Parmesan cheese
1 large egg
44 ml avocado oil
150 ml whole milk
½ teaspoon kosher salt
⅛ teaspoon black pepper
½ tablespoon oregano
40 g green onion
40 g bacon
40 g fried sausage

In the jar of a blender, add egg, oil, salt, pepper, and milk. Blend for one minute.

Next, add tapioca starch and blend well.

Add grated Parmesan cheese and oregano to the blender. Mix gradually until fully incorporated. Blend for three minutes until the mixture thickens. The batter is now ready.

Divide the batter into three small bowls: In one bowl, add finely chopped pan-fried sausage. In the second bowl, add finely chopped green onion. In the third bowl, add finely chopped or crumbled bacon.

Spray a 24-cup nonstick mini muffin pan with cooking oil. Fill the first 8 molds with the sausage batter, the next 8 molds with the green onion batter, and the last 8 molds with the bacon batter.

Bake in a preheated oven at 500°F (260°C) for 15 minutes or until golden.
