Cut the bondiola into medium-sized cubes, not too small to retain juiciness.
Place the meat cubes into a mixing bowl.
Add half a chopped onion and one whole minced head of garlic to the bowl.
Squeeze in the juice of one lime and one mandarin orange for flavor and color.
Season the mixture with black pepper, a touch of cumin, and coarse salt.
Mix the ingredients well and let them rest for 2 hours, or overnight in the refrigerator for better flavor.
Soak wooden skewers in water to prevent burning while grilling.
Skewer the marinated meat cubes onto the soaked skewers.
Prepare the grill to medium heat, not too high.
Place the skewers on the grill and turn them occasionally while cooking.
Baste the skewers with the remaining marinade to enhance flavor while grilling.
Monitor the color of the meat as it cooks, ensuring it develops a nice color and flavor.
