1 tablespoon garam masala
1 teaspoon coriander powder
1/2 teaspoon cardamom powder
1 teaspoon chili powder
1/2 teaspoon red chili flakes
5 curry leaves
1 cup water
1/4 cup fresh coriander
2 sliced green chilies

Ensure prawns are defrosted and cleaned, removing any shells.

Marinate the prawns with salt, cracked black pepper, fish spice, cayenne pepper, ginger and garlic paste, and lemon juice. Mix until fully coated and set aside for 10 minutes.

Peel and chop an onion, rinse and slit green chilies, and blend or grate the tomatoes.

Place a pot on medium-high heat and add vegetable oil.

Add the marinated prawns to the pot, spreading them out evenly. Fry for 2 minutes, then stir and fry for another 2 minutes until they change color. Remove the prawns and set aside in a bowl.

In the same oil, add chopped onions, green chilies, thyme, star aniseed, cinnamon stick, bay leaf, and cumin seeds. Sauté until onions are translucent.

Add turmeric powder, cumin powder, garam masala, coriander powder, cardamom powder, chili powder, and red chili flakes. Mix well.

Add the blended or grated tomatoes, curry leaves, and salt to taste. Mix and pour in a little water, cover, and cook for 10 minutes.

After 10 minutes, stir the mixture until it forms a thick gravy. Add the fried prawns and a little water, mix well, cover, and cook for 5 minutes to infuse flavors.

Garnish with freshly chopped coriander and sliced green chilies (optional). Serve with bread, roti, rice, or porridge.
