1 cup Worcestershire sauce
½ cup brown vinegar
2 tablespoons mixed peppercorns (black, white, and red)
1/3 cup whole coriander seeds
1½ tablespoons fine coriander
½ tablespoon fine cloves
½ tablespoon allspice

Marinate the beef/game in a mixture of sea salt, brown sugar, Worcestershire sauce, and brown vinegar for 24 hours.
