6 cloves
2 cinnamon sticks
1 tsp cumin seeds
2 bay leaves
4 tbsp oil
1.5 tbsp Goan vinegar
1.5 tsp ginger garlic paste
1 tbsp coriander powder
1 tsp cumin powder
1 tbsp garam masala
0.5 tbsp chat masala
3 tbsp Shan chicken biryani masala
3 tbsp lazy biryani masala
3 tbsp yogurt
1/3 cup tamarind
1 cup water
1/3 cup coriander stems
1 chopped tomato
1 tbsp ghee
2 stock cubes
red food coloring

Boil water in a pan and add salt, star anise, green cardamom, black cardamom, black peppercorn, cloves, cinnamon sticks, cumin seeds, and bay leaves.

Add 2 cups washed and soaked basmati rice and 4 tbsp oil to the boiling water and mix.

Cover and cook the rice until it's about 70% done, then strain it.

In a bowl, add 1.2 kg lamb meat, salt, 1.5 tbsp Goan vinegar, 1.5 tsp ginger garlic paste, 1 tbsp coriander powder, 1 tsp cumin powder, 1 tbsp garam masala, 0.5 tbsp chat masala, 3 tbsp Shan chicken biryani masala, 3 tbsp lazy biryani masala, and 3 tbsp yogurt. Mix well and marinate for about 1 hour.

Soak 2 cm round tamarind in 1/3 cup water and set aside.

In a hot pan, add oil and fry 3 medium sliced onions until light brown.

Add the marinated lamb to the pan and mix well.

Add 1 cup water, 1/3 cup coriander stems, 1 chopped tomato, and 1 tbsp ghee. Add the soaked tamarind and mix well.

Cover and cook until the meat is cooked, about 25 minutes, stirring until the gravy is semi-thick.

In a pan, layer some lamb curry at the bottom, then add some rice, repeating the layers.

Add coriander leaves and ghee on top, along with red food coloring. Cover and cook on low flame for about 20 minutes.
