700g of lamb, cut into bite size pieces, bone-in
1/2 cup ghee
3 small bay leaves
1 tsp of cumin seeds
1 inch cinnamon stick
1 black cardamom
5 green cardamom pods
1 large onion, sliced
1 and 1/2 tbsp of ginger&garlic paste
4 green chillies, chopped
2 large tomatoes, chopped
2 tbsp of yoghurt
2 cups of extra long grain basmati rice, washed
3/4 tsp of ground turmeric
1 tsp of ground coriander
1 tsp of ground red chilli
1 and 1/2 tbsp of mutton biryani masala (ready made)
salt to taste
some chopped coriander leaves
some mint leaves

Heat ghee in a pressure cooker and sauté sliced onions until golden brown.

Add ginger&garlic paste and chopped green chillies, cooking for a few minutes.

Stir in the lamb pieces and cook until browned.

Add chopped tomatoes, bay leaves, cumin seeds, cinnamon stick, black cardamom, green cardamom pods, turmeric, ground coriander, ground red chilli, and salt, mixing well.

Add yogurt and mutton biryani masala, stirring to combine.

Add washed basmati rice and enough water to cover the mixture.

Close the pressure cooker lid and cook on high pressure for about 15-20 minutes.

Release pressure, then let it rest for a few minutes before serving.

Garnish with chopped coriander leaves and mint leaves.
