Lao Sweet & Savory Beef Jerky

Traditionally made with fresh ingredients and a blend of spices, it reflects the rich culinary heritage of the region. The jerky is often served during festivals or as a companion to rice dishes. In modern times, variations have emerged globally, with many adapting the recipe to suit different tastes while maintaining its essential flavors.

Head to your local Asian supermarket and have your butcher cut your choice of beef thinly, about a quarter of an inch thick. If not, freeze the meat a little bit to make it easier to cut.
Season the meat with a dash of garlic powder, fish sauce, black pepper, chicken bouillon, some magic dust, and a little bit of MSG (optional).
Add a fourth of a cup of sugar (add more if you want it sweeter) and a little bit of warm water to help everything marinate well.
Mix and combine all the ingredients well.
Cover the mixture with Saran Wrap and let it refrigerate for a minimum of one hour, preferably overnight, to help the meat become tender and full of flavors.
Once marinated, lay the meat flat in a dehydrator, ensuring not to overcrowd each layer.
Cover the dehydrator, plug it in, and turn it on medium. Leave it on overnight, or for two to four hours if you're short on time.
After dehydrating, add vegetable oil to a frying pan and fry your beef jerky until it floats up, then quickly remove and place it on a cooling rack.
