1

Using a large bowl, add the curry paste, chili garlic sauce, fish sauce, sugar, garlic powder, onion powder, salt, paprika, egg yolk, kaffir lime leaves, and coconut. Stir well to combine.

2

Add the cooked rice and gently mix through.

3

Using your hands, take a large golf ball-sized round of the mixture and press firmly together to form balls or patties. Set aside.

4

Heat oil in a pot over medium-high heat, letting it come to 350 degrees.

5

Line a cookie sheet with a cooling rack or paper towels.

6

Fry the balls in small batches to avoid overcrowding. The balls should be completely golden brown on all sides.

7

Remove from the oil with a slotted spoon and let them rest on the cooling rack to drain excess oil. Repeat with remaining balls.

8

Allow the fried balls to completely cool before preparing the salad.

9

Using a large bowl, break the rice balls into small pieces. Add pork skin and toss to combine.

10

Add lime juice, taste and adjust as needed.

11

Add som moo and toss to combine.

12

Add cilantro and green onions and toss to combine.
