Garlic – 10 to 12 cloves
Chili flakes – 2 tsp
Coriander seeds – 2 tbsp
Cumin seeds – 2 tsp
Black pepper – 2 tsp
Green cardamom – 10 to 12
Turmeric powder – half tsp
Garam masala powder – half tsp
Tamarind pulp – 2 tbsp
Vinegar – 2 tbsp
Olive Oil – 3 tbsp
Salt as per taste

Dry roast coriander, cumin, cardamom and black pepper for 2 minutes.

Dry grind it with whole red chili. Don’t make fine powder, now add garlic and grind.

Then add all other remaining ingredients except oil and just grind for 2 seconds.

Now pour it in a bowl and add oil.

Use this masala to make shuwa of approximately 2 kg of mutton or beef.
