1 cup urad dal (split black gram)
1/4 cup rice flour
1/2 tsp baking soda
1 tsp salt
1/2 tsp turmeric powder
1/2 tsp red chili powder
1/2 cup finely chopped onion
2 green chilies, finely chopped
1/4 cup chopped coriander leaves
Oil for deep frying

Soak the urad dal in water for 4-6 hours or overnight.

Drain the soaked dal and grind it to a smooth batter, adding a little water if necessary.

In a mixing bowl, combine the ground dal, rice flour, baking soda, salt, turmeric powder, and red chili powder. Mix well.

Add the chopped onions, green chilies, and coriander leaves to the batter and mix until evenly distributed.

Heat oil in a deep frying pan over medium heat.

Wet your hands and take a small portion of the batter, shaping it into a round disc with a hole in the center.

Carefully slide the shaped vada into the hot oil. Fry in batches, making sure not to overcrowd the pan.

Fry the vadas until they are golden brown and crispy on both sides, about 3-4 minutes per side.

Remove the vadas from the oil and drain on paper towels to remove excess oil.

Serve hot with coconut chutney or sambar.
