1 inch ginger (minced)
2 green chillies (finely chopped)
1 sprig curry leaves (chopped)
1 tsp coriander seeds (crushed)
1 tbsp oil
¼ tsp mustard seeds
¼ tsp asafoetida (hing)
½ tsp salt
2 tbsp coriander leaves (roughly chopped)
1 cup besan
¼ tsp salt (for batter)
½ cup water
¼ tsp red chilli powder
¼ tsp turmeric powder
4 pav
1 tbsp Maharashtrian peanut chutney

Pressure cook halved potatoes for 4 whistles. Peel them.

Heat oil in a kadhai and let the mustard seeds splutter, add the coriander seeds, ginger, garlic, green chillies and curry leaves and saute well.

Add hing, salt and turmeric powder.

Add the potatoes and chopped coriander leaves.

Mash and mix well.

Make roundels of this mixture.

For the batter: combine the given ingredients to make a smooth batter.

Dip the potato mixture in the batter and deep fry until golden brown.

Place in between the pav and serve with peanut chutney.
