Prepare the batter for vada by mixing besan, salt, red chilli powder, turmeric powder, oil, baking soda, and water to achieve a smooth consistency.

In a pan, heat 2 tbsp oil and add mustard seeds, cumin seeds, and curry leaves to make the tarka.

Add the ground garlic paste, boiled and mashed potatoes, green chillies, and fresh coriander leaves to the tarka mixture. Mix well and season with salt and turmeric powder.

Shape the potato mixture into balls and dip them in the prepared batter.

Deep fry the vada in hot oil until golden brown.

Prepare the green chutney by blending fresh coriander leaves, garlic cloves, green chilies, ginger, salt, lemon juice, and water to a thick paste.

Prepare the dry red chutney by blending peanuts, garlic cloves, salt, and Kashmiri red chilli powder.
