Soak 1/2 cup urad dal and 1/2 cup green gram dal in water for 4 hours.

Drain the soaked dal and grind it into a fine paste, adding minimal water to keep it thick.

Mix in ginger chili paste and salt to the batter.

Whisk the batter by hand for 6 to 7 minutes until it becomes softer and fluffier.

Add 1/2 teaspoon soda bicarb to the batter and mix well.

Heat oil in a deep pan for frying the vadas.

Wet your spoon and drop dollops of the batter into the hot oil, turning them until golden brown.

Remove the vadas from the oil and soak them in water for 15-20 minutes.

After soaking, press and drain out all the water from the vadas.

Refrigerate the vadas to serve them chilled.

In a bowl, mix the chilled yogurt with a little salt.

Place the vadas in a serving bowl and pour the chilled yogurt over them.
