Soak 300 grams of urad dal in enough water overnight.

Drain the soaked dal and blend it with enough water to make a thick batter, adding water a tablespoon at a time if needed.

Transfer the batter to a bowl and add 0.5 teaspoon of salt, mixing well by hand for about 5 minutes to incorporate air.

Heat sunflower oil in a deep pan over medium heat.

Wet your fingers and take a portion of the batter, gently dropping it into the hot oil.

Fry the vadas for 2-3 minutes until they are lightly golden brown.

Remove the vadas and drain them on paper towels.

Prepare a bowl of tap water and mix in 0.5 teaspoon of cumin powder, 0.5 teaspoon of salt, 0.5 teaspoon of chili powder, and 1 teaspoon of tamarind chutney.

Soak the fried vadas in the spiced water, only soaking as many as you want to eat.

In another bowl, mix 250 grams of yogurt with a big pinch of salt, a big pinch of sugar, and some warm water to thin it out.

Take each soaked vada, gently press to remove excess water, and place it on a serving plate.

Pour the prepared yogurt over the vadas, covering them completely.

Sprinkle with chili powder, ground cumin, a pinch of chaat masala, a little more salt, and black pepper.
