Soak 200 grams of urad dal and 200 grams of moong dal for four hours.

Grind the soaked dal coarsely.

Add grated ginger, salt, and asafoetida to the ground dal and mix well.

The batter should not have a pouring consistency.

Add 1/2 tsp of Eno salt to the dal mixture and mix gently, without whisking too rigorously.

Grease the idli stand with oil.

Take one spoon of the dal mixture, flatten it with water to form a round dahi vada.

Place 1 or 1.5 tsp of dal and flatten it to shape the vada.

Cover the pressure cooker and add 2 cups of water.

Place the idli stand in the pressure cooker and cook the dahi vadas for 10-12 minutes.

Check if the vadas are ready by inserting a knife; it should come out clean.

Turn off the gas and remove the idli stand from the pressure cooker.

Separate the molds and place the vadas on a plate.

Soak the vadas in lukewarm water for 5 minutes.

In a pan, warm water and add salt, then turn off the gas.

Drench the dahi vadas in the warm salted water for 5 minutes.

After 5 minutes, take the vadas out of the water and gently squeeze them.

Place the dahi vadas on a plate.

Sprinkle salt, black salt, curd, roasted cumin powder, sweet chutney, coriander chutney, and red chili powder on top.
