French Cheese Puffs Gougères

Originating from the Burgundy region of France, gougères are a delightful pastry made from choux dough mixed with cheese. Their light, airy texture and cheesy flavor make them a favorite, and they have gained popularity worldwide, often featured in French bistros and restaurants.

Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
In a saucepan, combine water, butter, and salt over medium heat until the butter melts and the mixture boils.
Add all-purpose flour to the saucepan and stir vigorously until the mixture forms a ball and pulls away from the sides of the pan, about 1-2 minutes.
Remove the saucepan from heat and let it cool for a few minutes.
Add eggs one at a time, mixing well after each addition until the dough is smooth and glossy.
Stir in grated gruyère cheese, black pepper, and nutmeg until evenly combined.
Spoon or pipe the dough onto the prepared baking sheet, leaving space between each mound.
Bake in the preheated oven for 20-25 minutes until the gougères are puffed and golden brown.
Remove from the oven and let cool slightly before serving.
