Cultural Context

Originating from the Burgundy region of France, gougères are a delightful pastry made from choux dough mixed with cheese. 1 cup water
1/2 cup butter
1 cup all-purpose flour
3 large eggs
1 cup Parmesan cheese
1/4 teaspoon cayenne pepper

gruyère cheese

🥗Healthier: reduced-fat cheese

💰Cheaper: emmental cheese

Emmental is often less expensive while still providing a similar flavor.

1

Put 1 cup of water and 1/2 cup of butter in a saucepan and heat until the butter is melted.

2

Add 1/4 teaspoon of cayenne pepper to the saucepan with the melted butter.

3

Add 1 cup of all-purpose flour all at once to the saucepan and stir vigorously until the mixture forms a ball and pulls away from the sides of the pan.

4

Turn off the heat and let the dough cool for 2 minutes.

5

Add 3 large eggs one at a time, mixing thoroughly after each addition until the dough is smooth and comes together.

6

Stir in 1 cup of grated Parmesan cheese, saving a couple tablespoons for topping later.

7

Prepare a baking sheet lined with parchment paper.

8

Use two spoons to scoop small balls of dough onto the baking sheet, spacing them about an inch apart, aiming for about 30 small balls.

9

Sprinkle the reserved Parmesan cheese on top of each ball.

10

Preheat the oven to 425°F (220°C) and bake for 10 minutes, then reduce the heat to 375°F (190°C) and bake for an additional 20 to 25 minutes until golden brown.
