French Cheese Puffs Gougères

1 cup water
1 teaspoon salt
1 cup flour

Prep all ingredients before starting as the process moves quickly.

Grate the cheese, cut the butter, chop the chives, and measure out the flour, water, and salt.

Preheat the oven to 425 degrees Fahrenheit.

In a saucepan, melt together the water, butter, salt, and a few twists of black pepper or a pinch of red pepper.

Once melted, add all of the flour at once and stir vigorously until the dough pulls away from the sides of the pan and forms a smooth ball.

If the dough looks too liquidy, increase the heat slightly to help it come together more quickly.

Remove the pan from heat and let it cool for a few minutes to avoid cooking the eggs when added.

Add the eggs one at a time, stirring vigorously after each addition.

Add the grated cheese and chopped chives to the dough and mix until combined.

Scoop the dough onto a baking sheet using a scooper, spoon, or a makeshift piping bag made from a ziplock bag with a corner cut off.

Sprinkle a little bit of cheese on top of each puff before baking.

Bake in the preheated oven for 10 minutes at 425 degrees Fahrenheit, then lower the heat to 375 degrees Fahrenheit and bake for an additional 20 to 25 minutes.
