Soak 1 cup of urad dal in water for about 4 hours.

After soaking, discard the water and add the urad dal into a mixer jar.

Grind the urad dal in batches without adding water, adding a teaspoon of water if needed, until you have a nice thick batter.

Refrigerate the batter for about 1 hour.

After refrigerating, add 1/2 teaspoon of salt to the batter and mix well.

Whisk 800 grams of yogurt until creamy, adding 1-2 teaspoons of water if the yogurt is too thick.

In a tempering pan, heat 2 teaspoons of oil, then add mustard seeds, cumin seeds, finely chopped ginger, chopped green chili, 2 red chilies, 1/4 teaspoon hing, and curry leaves. Turn off the stove once the spices are tempered.

Pour the tempered mixture into the yogurt and add 1 teaspoon of salt, mixing well.

To make buttermilk, take 1 tablespoon of yogurt and dilute it with 2 cups of water.

Heat enough oil in a kadai for deep frying the vadas.

Take a small amount of the batter, dab your fingers with water to prevent sticking, and make a hole in the center of the batter before gently sliding it into the hot oil.

Fry the vadas on medium flame until they turn golden brown, then remove from oil and set aside.

Gently drop the fried vadas into the buttermilk mixture and remove them immediately.

Assemble the vadas on a plate and generously pour the yogurt mixture over them.

Garnish with chopped coriander leaves, boondi, and a sprinkle of chili powder.
