Mustard seeds - 1 tbsp
Yellow Mustard - ½ tbsp
Cumin - ½ tbsp
Black Salt - ½ tbsp
Salt - ½ tbsp
Chilli powder - 1 tsp
Turmeric - ¼ tsp
Dahi (yogurt) - 1½ tbsp
Water - 1 liter
Cinnamon - 1 no
Heeng (asafoetida) - ½ tsp
Ghee - 1 tsp
Moong Dal - 1 cup
Ginger - 1 inch piece
Green Chilli - 2 nos
Cumin - 1 tsp
Salt - to taste
Water - a dash
Chilli Flakes - 2 tsp
Coriander chopped - 2 tbsp
Whole coriander - 2 tsp
Oil - for frying
Mint leaves - handful
Warm Water - 1 lt

Prepare the Kanji by mixing mustard seeds, yellow mustard, cumin, black salt, regular salt, chilli powder, turmeric, dahi (yogurt), and water in a container.

Allow the mixture to ferment for a few days until sour.

For smoking, heat ghee in a pan, add cinnamon and heeng (asafoetida).

Prepare the Moong Dal Vada by soaking moong dal, then grinding it with ginger, green chilli, cumin, and salt, adding a dash of water if needed.

Form the mixture into fritters and fry them in hot oil until golden brown.

Soak the fried vadas in the prepared Kanji mixture.

Serve the Kanji Vada garnished with mint leaves and warm water.
