1 Tbsp yellow mustard
1 Tsp black salt
1 Tsp salt
1/2 Tsp kashmiri chilli powder
1/4 Tsp turmeric powder
1/4 Tsp asafoetida
1.5 Litre water
1 Cup moong dal
1/2 Tsp salt
1/3 Tsp cumin seeds
1/2 Tsp crushed coriander
3 Pinch asafoetida
1 Tsp chopped green coriander
1 Tsp chopped ginger
2 Tsp hot oil

Prepare the Kanji water by mixing black mustard, yellow mustard, black salt, salt, kashmiri chilli powder, turmeric powder, asafoetida, and water in a container.

For the Vada, soak moong dal in water, then grind it to a coarse paste.

Mix the ground moong dal with salt, cumin seeds, crushed coriander, asafoetida, chopped green coriander, chopped ginger, and hot oil.

Shape the mixture into small vadas and deep-fry them until golden brown.

Serve the vadas in the prepared Kanji water.
