Kanji Vada

1+1/2 cup moong dal
1/2 inch ginger
2 green chillies
1 tbsp coriander seed
1 tsp cumin seed
1 tsp crushed red chillies
Salt to taste
3 tbsp besan or gram flour
3 tbsp wheat flour
Chopped coriander leaves
2 tbsp mustard oil
Oil for frying
1/2 tsp ghee
1/2 tsp asafoitida or hing
1 litre water
1 tbsp ground mustard seed
1 tsp cumin seed
1 tsp red chilli powder
Salt to taste

Soak 1+1/2 cup moong dal for a few hours, then grind it into a smooth batter.

Add 1/2 inch grated ginger, 2 chopped green chillies, 1 tbsp coriander seeds, 1 tsp cumin seeds, 1 tsp crushed red chillies, salt to taste, 3 tbsp besan, and 3 tbsp wheat flour to the batter and mix well.

Heat oil for frying in a pan.

Drop spoonfuls of the batter into the hot oil and fry until golden brown to make vadas.

In a separate pot, heat 1 litre of water and add 2 tbsp mustard oil, 1/2 tsp ghee, 1/2 tsp asafoitida, 1 tbsp ground mustard seeds, 1 tsp cumin seeds, 1 tsp red chilli powder, and salt to taste to create the kanji.

Once the vadas are fried, soak them in the prepared kanji for a few minutes before serving.
